Lemon Bites Recipe



 
These were a big hit, but they are somewhat time consuming, so we did not make them very often. Every time we did make them, we sold out quickly.

Lemon Bites

Yield: approximately 60 small cookies / 5 dozen (use small scoop)

60 grams tapioca flour
120 grams cane sugar
1 teaspoon xanthan gum
1 teaspoon cream of tartar
1/8 teaspoon fine salt
1/2 tablespoon freshly grated lemon peel

160 grams cold shortening, cut in smallish pieces

1 egg
1+ tablespoons fresh squeezed lemon juice
Preheat oven to 350°F. Line baking sheets with parchment paper.
Measure dry cookie ingredients directly into mixer bowl and whisk until thoroughly combined. 

Measure pieces of shortening into bowl. Put bowl on stand mixer and beat on high for about 1 minute, until dough forms a ball. 

Add egg and lemon juice, and mix to form a sticky, stiff dough. If the dough is too dry, gradually drizzle in more juice, not too much.

Set out a shallow bowl of sugar (about 1 cup). Scoop balls of dough into sugar. Roll in sugar, place on parchment paper (11 per sheet) lined baking sheets, press flat with palm of hand, and bake for 6-1/2 minutes at 350 degrees. 

Cool on pan for 6 minutes before transferring to cooling rack to finish cooling.

Chocolate Chip Cookie Recipe (Old way, crispier)




Chocolate Chip Cookies (Old way, crispier)

Makes approximately 38 big cookies.

384 g (2-3/4 cups) brown rice flour blend (see below)
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon xanthan gum

110 g (3/4 cup) cold Spectrum organic shortening
114 g (1/2 cup firmly packed) brown sugar
160 g (3/4 cup) sugar

2 eggs
2 teaspoons vanilla extract

300 g (1-3/4 cups) semi-sweet chocolate chips (we use Kirkland brand from Costco)


Heat oven to 375°F.

Combine flours, baking powder, baking soda, salt and xanthan gum in medium bowl. Set aside.

Combine shortening, brown sugar, and sugar in large bowl. Beat at medium speed, scraping bowl often, until creamy. Add eggs and vanilla. Continue beating, scraping bowl often, until well mixed.

Reduce speed to low. Beat, gradually adding flour mixture, until well mixed. Stir in chocolate chips briefly.

Drop dough with large scoop onto parchment paper lined pans. Bake for 7-1/2 to 9 minutes or until light golden brown. (DO NOT OVERBAKE.) Let stand 1 to 2 minutes. Remove from cookie sheets.



Brown Rice Flour Blend:
6 parts brown rice flour
2 parts potato starch (not potato flour)
1 part tapioca starch

We use Bob's Red Mill for all our flours since they are made in a dedicated gluten-free facility. I measure out one bag of Bob's Red Mill brown rice flour by weight (in grams). Then I divide that weight by 6 to get the grams of tapioca starch needed. Then I double the grams of tapioca to get the potato starch amount.

Alternately you could do 6 cups brown rice flour to 2 cups potato starch to 1 cup tapioca starch. Or 3 cups brown rice flour, 1 cup potato starch, 1/2 cup tapioca starch.

We are shutting down!

After doing the math, all the hard work we did over the summer was for nothing.

We spent approximately 15 to 20 hours each week baking, working at the Farmer's Market, handling social media (website and Facebook), grocery shopping, customer service, etc. and basically worked for free. Gluten free ingredients are just still too expensive without buying in massive bulk. And unfortunately, we had a lot of people who thought our prices were too high and therefore didn't buy anything.

We didn't really lose any money, we managed to basically break even on the amount we spent for ingredients, gas, and baking equipment. Still, 360-400 hours working for free just wasn't worth it.

We'd like to say a HUGE THANK YOU to everyone who supported us and liked our baked goods. As we have time, we will be posting our recipes so that you can continue to eat yummy baked goods. So watch this space for recipes and some gluten free and dairy free baking tips.

We WILL be at the Final Farmer's Market Tomorrow

Good morning! Two Sisters Gluten Free Bakery will be at the Leavenworth Farmer's Market tomorrow morning from 8 a.m. to noon. It will be chilly early on, but should warm up pretty nicely.

On the menu: Honey Millet Bread, Cinnamon Swirl Bread, and Chocolate Chip Cookies. All of these items are gluten free and dairy free.

If you haven't tried our cookies (or even if you have), we always have free samples. This is the last Farmer's Market of the season, so be sure to stop by! 

Quick update on baking to order until the Spring Farmer's Market begins: beginning November 15th (Fridays), we will be baking to order (bread, cookies, cupcakes). If you haven't signed up for our email list, you can sign up to the right of this post and "follow" us by email. I will post a reminder on Tuesdays with pricing and pick-up information, and if you follow us by email, the post will show up in your mailbox.

We will do a special baking the week of Thanksgiving. Instead of Friday that week, we will bake on Wednesday (November 27th) so you can have fresh goodies for the big day. We will have stuffing cubes and rolls available.

If you need gluten-free/dairy-free cupcakes or cookies for a special occasion, we can make Vanilla Cupcakes with either Vanilla or Chocolate Frosting, as well as Chocolate Chip Cookies. Please let us know (by email or phone) -- we'd love to make your special day great!

We will not be at the Farmer's Market Saturday


Good morning! With the extremely cold weather expected tomorrow (near freezing), we will not be at the Leavenworth Farmer's Market tomorrow. Our experience so far has shown us that cold weather keeps most people away from the market, and our baked goods just won't keep until the next week, costing us money. We hope the weather will cooperate for the final market on October 26th.

We will begin taking weekly orders in just a few weeks. Order reminders will be posted here and on Facebook on Tuesdays, for Friday morning baking. We will be "delivering" orders Friday afternoons from 4:30 to 5:30 at Haymarket Square (where the Leavenworth Farmer's Market is held). To make sure you get our reminders, you can follow this blog by email (form to the right of the website).

If you want to place a special order for cupcakes or cookies for an event, we can do that too. We'll post more information on that shortly. We will also do a special early baking for Thanksgiving (probably Wednesday).

For everyone out there who can't have eggs, we are working hard on an egg-free version of our Honey Millet Bread. It tastes great, but is very flat, so we're still working on getting it to rise.

Farmer's Market Wednesday Sept. 25th from 3 to 6 p.m.

Good morning! Today is the LAST WEDNESDAY Farmer's Market for this year. We will continue to be at the Leavenworth Farmer's Market on Saturdays through the end of October ... so you can still get your bread fix. This Saturday will still be 7 to 11 a.m., but beginning October 5th the market hours will change to 8 a.m. to 12 noon.

Today we are bringing Honey Millet Bread, Cinnamon Swirl Bread, and Chocolate Chip Cookies (all gluten and dairy free, of course).

Last Saturday, with the Post garage sale, attendance was down and we had an extra five loaves of Cinnamon Swirl Bread which we immediately froze. If you would be interested in a frozen bread loaf at a reduced rate ($5) please call us (913 683 1422) and we can bring some with us to the market. The frozen bread thaws well, and still makes wonderful French Toast or French Toast Casserole.

We got in! To the Saturday Farmer's Market that is. We will be there this Saturday from 7 to 11 a.m. We will be at all the Saturday Farmer's Markets through the end of October (when the Market ends for the season), as well as Wednesdays. Can you believe there are only two more Wednesday markets?

Tomorrow morning, bright and early, we'll be there with our Honey Millet Bread (great for sandwiches or toast), Cinnamon Swirl Bread (we tend to sell out of this early -- it's sooo yummy), Chocolate Chip Cookies (by the half dozen), and Vanilla Cupcakes with Chocolate "Buttercream" Frosting. Of course, everything we are bringing is Gluten Free and Dairy Free!

Farmer's Market Wednesday September 11 from 3 to 6 p.m.

Good morning! School is back in session so the Wednesday Farmer's Market traffic has slowed waaay down. There's still lots of yummy veggies and, of course, our gluten-free dairy-free baked goods for sale.

With the slow down we are bringing a smaller variety of items for sale. Today we will have Honey Millet Bread, Cinnamon Swirl Bread, and our best-selling Chocolate Chip Cookies. Stop by for FREE samples!

We will find out today if we can get into this Saturday's Farmer's Market -- it's Second Saturday, which means the Farmer's Market has to share space with the Flea Market, so space is at a premium. Regardless of what happens this weekend, we've been told we can get a Saturday space beginning September 21st and going through the end of October! We have already learned that we will be able to get both a Wednesday and a Saturday space next year (May through October 2014).

Our goal is to eventually open a brick-and-mortar bakery and cafe (hoping by November 2014), so we have to keep building our business all year long. We dream of a gluten and dairy free place to eat here in the Leavenworth/Lansing community. We have many more yummy recipes to share, but not enough time and oven space to bring them to the Farmer's Market. Over the winter we will continue to work on our Artisan French Bread, cake decorating skills, and many more cookie recipes. Brownies anyone?

If you are can't live without our breads (and cookies, cinnamon rolls, cupcakes) over the fall and winter months when the Farmer's Market is closed, we are planning to continue baking once a week. Please talk to us -- in person at the market, through comments here or on Facebook, by email, or phone (see contact info on our website) -- if you are interested. We'll set up a mailing list (we won't sell your info) and keep in touch.

Farmer's Market Wednesday September 4th

Good morning! We'll be at the Leavenworth Farmer's Market today from 3 to 6 p.m. (or until we run out of goodies, whichever comes first!).

Fresh from the oven today we're bringing Honey Millet Bread, Cinnamon Swirl Bread, Chocolate Chip Cookies, Cinnamon Rolls, and Vanilla Cupcakes with Chocolate Frosting. Everything is gluten free, dairy free, and totally yummy!

We recently made the switch from almond milk to coconut milk to accommodate people with tree nut allergies (coconut allergies are extremely rare, and it works better in baking than rice milk). We were using almond milk in the glaze on the Cinnamon Rolls, but it is now tree nut free, as our other baked goods have been all along. (The ingredients page has not yet been updated with the new information, that's on my to-do list.)

A number of people have asked us about selling at the Saturday market. We hope to get a space on Saturdays beginning September 14th through the end of October when the market closes. We'll keep you updated once we find out for sure. We are planning to do both Saturday and Wednesday next year.

Farmer's Market Wednesday August 21

Gluten free and Dairy free Honey Millet Bread


Good morning! We missed you all last week while we were on our missions trip. We're back and baking up a storm today.

On today's menu: fresh from the oven Honey Millet Bread, sweet Cinnamon Swirl Bread, iced Cinnamon Rolls, and soft Chocolate Chip Cookies. All of these items are gluten and dairy free!

The feedback on our mini Vanilla Cupcakes with Chocolate Frosting samples (from the Wednesday celebration two weeks ago at the Farmer's Market) was so positive, that we are planning to bring them beginning next week! I have to find a suitable package to bring them in so they don't get squished and the frosting doesn't get messed up. (Although they'd still taste yummy I'm sure!)

Good morning! The thunderstorms of this morning should gave way to cloudy skies at the Leavenworth Farmer's Market today from 3-6 p.m. So hopefully no rain will hinder your visit and taste testing of our FREE Gluten-Free Dairy-Free Mini Vanilla Cupcakes with Chocolate Frosting! You have to try them, they are so moist and luscious.

FREE CUPCAKES? That's right! This is National Farmer's Market Week, and in celebration the Leavenworth Farmer's Market will have free cake (we are contributing the yummy cupcakes mentioned above), lemonade, and a cooking demo from Chef Elena of Cafe Chillengo.

If you haven't been to Cafe Chillengo, you should know that Chef Elena is gluten free herself (she loves our Cinnamon Rolls) and can make any dish gluten free and/or dairy free just for you (without worries of cross contamination!).

As always, we'll have our Honey Millet Bread, Cinnamon Swirl Bread, Cinnamon Rolls, and Chocolate Chip Cookies -- all Gluten Free and Dairy Free!

Lamborn Farm Farmer's Market Today From 4 to 8 p.m.

Frosted Cinnamon Roll (Gluten Free & Dairy Free)

Good morning! We will be at the brand new Lamborn Farm Farmer's Market today from 4 to 8 p.m. with our yummy Gluten-free and Dairy-free baked goods.

Today we are bringing our NEW Frosted Cinnamon Rolls, shown in the picture above. You'll notice that the frosting is not pure white like on the Cinnamon Rolls you get from most bakeries and packaged baked goods. That's because we use REAL Vanilla Extract, not the clear imitation vanilla extract, which is full of chemicals.

From Wikipedia:
"... imitation vanilla extract, a wood by-product usually made by soaking alcohol into wood which contains vanillin. The vanillin is then chemically treated to mimic the taste of natural vanilla."
Yuck! Not in anything we make. Ever.

We double-glaze our Cinnamon Rolls, brushing on vanilla glaze when they come out hot from the oven, and then again once they have cooled. So every single bite is full of deliciousness.

We also have our Honey Millet Bread, Cinnamon Swirl Bread, and BIG Chocolate Chip Cookies. We sell those cookies individually or by the half dozen.

New Items at Today's Farmer's Market!

Today at the Leavenworth Farmer's Market we'll have two new items, both gluten-free and dairy-free!

 
First we have our yummy Frosted Cinnamon Rolls. We take our Honey Millet Bread and roll it up with brown sugar and cinnamon, then top it off with a vanilla frosting.

Next, in response to multiple requests, we have our Honey Millet Rolls. These fantastic rolls are go great with any meal.

Gluten-free Honey Millet Bread

We'll be at the Leavenworth Farmer's Market again this week with four yummy goodies! And they are all gluten-free AND dairy-free!

Everyone's favorite sandwich bread is Honey Millet Bread.  Featuring our own gluten-free flour blend (millet flour, tapioca starch, potato starch), water, honey, organic eggs, golden flax seeds, extra-virgin olive oil, psyllium husk powder, yeast, and kosher salt. This bread is soft, bendable, and makes great grilled cheese (if you can have dairy). Try a grilled PB&J with it as well.

Our bestselling bread is our fabulous Cinnamon Swirl Bread. This bread uses our Honey Millet Bread as the base, and then rolls it up with a ribbon swirl of cane sugar and cinnamon. If it doesn't get eaten before it gets stale (not likely, but it can happen), use it to make French Toast Casserole.

As always, we have our famous Chocolate Chip Cookies. Quality ingredients include our own gluten-free flour blend (brown rice flour, potato starch, tapioca starch), chocolate chips (chocolate liquor, sugar, soy lecithin, vanilla), organic palm shortening, brown cane sugar, organic eggs, cane sugar, vanilla extract, baking powder, baking soda, sea salt, and xanthan gum.

Rounding out this week's offerings, we have our NEW Lemon Bites. Soft and sweet and tart all at the same time, these tasty tidbits will make your tummy super happy! Made with our gluten-free flour blend (brown rice flour, potato starch, tapioca starch), cane sugar, organic palm shortening, organic eggs, fresh-squeezed lemon juice, freshly grated lemon peel, xanthan gum, cream of tartar, and sea salt.

Our First Two Weeks at the Farmer's Market

Our first week at the Leavenworth Farmer's Market was very successful! We SOLD OUT of everything by 5:30! Our second week went almost as well. There were fewer people overall, but we had FOUR repeat customers! We really enjoyed meeting some new customers as well. We're so glad you all stopped by and hope to see you again next Wednesday.

In related news, we will be joining Lamborn Farm for their new Farmer's Market! This Farmer's Market will take place on Friday evenings from 4-8 p.m. beginning June 7th. We're excited to bring our gluten-free baked goods to more people!

Gluten-free and dairy-free Cinnamon Swirl Bread

Our Cinnamon Swirl Bread was a big hit! While we love it plain or toasted with some butter, it also makes wonderful French toast, or a French toast casserole. Both are a great way to use up stale or dry bread. If you use our regular Honey Millet Bread, you could try it with some savory seasonings instead of sweet, and it would be similar to a quiche. This is a very forgiving recipe, you can easily adjust the amounts to suit your tastes and what you have on hand.

French Toast Casserole

Butter a casserole dish. Cut bread (Cinnamon Swirl or Honey Millet or both) into cubes and place evenly in the dish. Mix up several eggs and some milk (we use Silk Almond Milk) with a little bit of vanilla extract, some sugar, a dash or two of nutmeg, and ground cinnamon. Pour over the cubes, making sure you have enough to cover the cubes almost completely. Press the cubes down into the liquid with the back of a large spoon and let them soak up the mixture while you preheat the oven to 350 degrees F. Bake for approximately 30 minutes, or until a knife inserted in the center comes out clean. Serve with maple syrup.

Gluten-free Hamburger Buns!
I am hard at work on Hamburger Buns right now. These have a wonderful flavor and hold up beautifully without breaking or crumbling. I think they are still a bit too dense, so I'm trying to lighten them up a bit. Hopefully we will have these ready to sell within the next few weeks.
